I recently bought a water temp... three piece gauge set. Im unsure where to connect the water probe there are two places I've check that I could put it in. One is right under the thermostat near the top radiator hose and the other spot is on the block closer to the carburetor, both of those spots have temp sensors or what I think are temp sensors, which one do you guys recommend I remove to hook up the meter.
I would suggest putting it in the lower thermostat housing.
Because it's the furthest from the exhaust? Just curious
Yep, I think the exhaust port will tend to give you high readings. We just went thru this on a post a couple days ago.

On the lower t-stat housing fer sure.
So i installed it and there was no reading
Is it a mechanical or electrical gauge?
Mechanical gauge
Not much to go wrong with a mechanical temp gauge, except if the capilary tube gets crimped,kinked, or cut.
