For your needs I think a simple two-barrel carb will be quite adequate and simpler/cheaper to build.
Consider a Rochester 2GC. They are compact, plentiful, and cheap.
Or an Autolite 2100 / 2150 series, the most underated carb for performance upgrades. Simple, easy to work on and also plentiful and cheap.
What's the manifold of choice for a 2bbl? I've looked for 292 2bbl manifolds, or the pre '75 250 2bbl, on ebay and other places online but have not had much success. I know CNC dude is designing an aluminum one, but you have to wait for that one. I suppose on a truck an adapter on the Offey would work, but for my low Camaro hood it really restricts any additional height as the stock 2" air cleaner barely clears the hood.
