Well dual carbs & exhaust will work okay.
You won't need an ignition change as your 12V already in a warm climate with a low RPM application. You can do without the manifold heat too because of this.
A +.125 overbore will give you 252 CID & a Howard F-290 cam from Patrick's should do it nicely for a low cost.
