I am changing to a 2bbl on my Barracuda.The manifold studs on a slant6 are an aggrivator. The ARP studs with hex indentations will make installation of the inner fastners easier. Would the use of bolts instead of studs hold in an acceptable manner?

I don't see why not if it's easier for you. I would use a thread locker from Loctite though.
