I had to run mine that way on my 250 with the carb sideways on the manifold so the primaries are facing the valve cover and it works fine.
I originally used a Gennie Shifter throttle cable but it wasn't as smooth as I thought it should be so I replaced it with a Lokar cable and it is smooth as silk now. Keep the radius of the 90 degree bend nice and gentle and it works fine. You'll have to make up some small brackets to support the cable in the area of the bend. I made 2 and they attach to the carb mounting studs, one at the bend and the other further back to guide the cable back in alignment with its firewall bulkhead fitting. Both cables I bought had a 24 inch long outer jacket and fit on my car fine but you may need or want to get the longer cable kit so you can route the cable to fit your vehicle. You can shorten a longer one but stretching the short may result in a very tight radius and cause binding.
The Offy manifold came with a bellcrank kit but it is a rather clunky looking piece in my opinion.
