I'm looking at various intake/ exhaust manifolds and they all say "fits 216 - 235". Does that mean that they will fit a 261 as well? Are the intake ports in the 235 same as 261? How about the exhaust ports - 235 and 261 the same?

The 235 and 261 ports are the same, 216 ports are smaller.

50-52 235 w/powerglide and all 53-62 235/261's have the larger ports. 37-53 216 and 41-52 235 w/manual tranny have the smaller ports.
Most of the vintage intakes you will find have the smaler ports. You can still use them on the later engines, it's just that the intake alignment rings won't work. You can have the intake milled out to the larger port size if you want to spend the time/money.
Offy still sells both versions.
Also, the way the intake bolts up to the exhaust is different between the two types, but if you are going to run headers, then its not an issue.

Don't misunderstand Gearhead. The alignment rings (intake)are needed. So be sure to get the right manifold for your head. The exhaust doesn't have them/headers "don't count" like he said. Good luck.

Thanks gentlemen. Also, I have done search after search for Offenhauser and found only dealers selling V-8 intakes/headers. I suspect that the Offenhauser name is a brand manufactured by some big company like TRW or Borg Warner. Does anyone know who the manufacturer of Offenhauser intakes is or have any contact information for Offenhauser?

Offy makes Offy parts. They keep a low profile and sell though vendors. Speedway Motors, Hot Rod and Custom Supply, Tom Langdon, and Patrick's are some of the places that carry these intakes. Most any aftermarket supplier of parts for 37-62 vintage Chevies should have the parts also.
