Leo Santucci's new book "Chevrolet Inline Six-Cylinder Power Manual" says from bottom of block to top of block is 10.875 inches. Add the height of any valve cover from 194/230/250/292 and a 292 pan. The 194/230/250 pan has a bit less height, and holds one quart less oil.
